He emphasizes simplicity, freshness and natural textures with cultural influences and specializes in progressive Indian cuisine. A graduate of IHM Kovalam, he started his career as a management trainee at the prestigious Taj Lands End, Mumbai. Since then Chef Bijoy have garnered. 11 years of culinary mastery and operational experience. During his career, he had worked with several global hotel chains like Marriott, IHG, Taj and Starwood in India and Middle East. He brings his diligent attitude, expertise in flavour profiling and proficiency in building successful restaurants. He believes his strength lies in developing young talents and the greatest satisfaction comes from watching his team works well, in turn results in increased patronage.
